The Fullerton Hotel Singapore’s Jade restaurant, well loved by connoisseurs of Cantonese cuisine, has been revitalised with a new menu and interiors – both of which seemingly a celebration of Chinese executive chef Leong Chee Yeng’s genius in food and art.

The renewed Jade has taken a more focused culinary direction stemming from eight signature dishes, which are characterised by fresh, premium ingredients that are prepared using labour-intensive processes. They include double-boiled dried seafood in superior broth and sauteed diced beef tenderloin.

The new interiors, using an timeless and calming palette of white and powder blue, feature wallpaper with motifs of birds local to Singapore – an element inspired by an elaborate gelatine table centrepiece once crafted by the artistic executive chef. More of Leong’s creations – 18 ceramic pieces – are also displayed throughout the restaurant, most of which reside in the many private dining areas.

Jade offers two private rooms which can seat 12 and 15 guests and be combined for larger gatherings of 30 people. There are also two semi-private rooms, each good for 12 guests.
